Carrot And Apple Soup.

Vegetables are an essential part of a healthy diet but also taste fantastic, especially when made into soup.This soup is very easy to make.The herbs and honey are are not essential but as they say it gives it "that little extra kick".Garlic can also be added if required.The addition of some potatoes makes it more wholesome and filling.

Ingredients:

  • 2 onions.
  • 6 - 8 large carrots (diced into small pieces).
  • 2 medium apples (golden delicious ideal but any type will do) diced.
  • 5 small potatoes.
  • 1 tsp ginger(grated).
  • 1 tsp oregano.
  • 2 bay leaves.
  • 1 litre of vegetable stock.
  • 2 tbsp soy sauce.
  • Honey
  • Large knob of butter.
  • One Large saucepan.

Method:

  1. Peel and finely dice the onion and garlic and sweat gently with the butter until the onion is translucent.Do this at a low temperature and constantly stir and turn the onions.
  2. Add herbs to the onion.
  3. Once you can get the smell of the herbs add the carrots to the pan turning up the heat slightly and gently fry for a few minutes,turning and stirring all the time so that everything cooks evenly.
  4. Add the apples to the saucepan along with half the vegetable stock along with a pinch of salt and pepper.Cover with a lid and bring to a gentle simmer,add the bay leaves (if using)and cook for 10 minutes.
  5. Remove saucepan from heat(Remove bay leaves if using).Puree the soup until smooth.
  6. Return the soup to the heat and add remaining stock and soy sauce and taste for seasoning.Adjust the thickness of your soup by adding more water and also test sweetness and add honey if required.

Serve with a dollop of natural yogurt in the middle.
